May is National Egg Month and there’s no better way to start your day than with eggs! That’s why we’ve compiled these Easy Eggs 9-Ways as your go-to guide for cooking the classics along with a few new and innovative recipes that think outside the box and keep your breakfast fun!

Scrambled
Scrambled eggs are an easy, go-to classic and one of the most versatile breakfast options to keep everyone happy! The trick to a lighter and fluffier scramble? A thorough and vigorous beating will whip more air into your eggs resulting in the perfectly textured bite.
Ingredients (serves 4)
4 large Noah’s Pride eggs
¼ cup milk
2 tsp butter
salt and pepper, to taste
Instructions
- Whisk eggs, milk, salt and pepper in a bowl until well combined.
- In a nonstick skillet over medium heat, melt butter and add eggs.
- Gently pull, lift and fold the eggs with a spatula as they begin to set and are cooked to your liking.
- Enjoy!
Hard-Boiled
Making the perfect hard-boiled eggs is all in the cook time and the age of the eggs. Did you know that the older eggs are the easier they will peel? That’s because fresher eggs have a stickier membrane which easily sticks to your cooked eggs and can make peeling difficult. Over time, the membrane will naturally begin to separate itself from the shell, making peeling a breeze!
Ingredients (serves 6)

Instructions
- In a saucepan, place eggs in a single layer and cover with cold water, bring to a boil over high heat.
- Once boiling, remove saucepan from burner, cover and let sit for about 12 minutes.
- Remove eggs immediately and run under cold water or place in an ice bath to stop the cooking process.
- Peel and enjoy immediately or refrigerate for later!
Poached
There’s nothing quite like a good eggs benedict with the perfectly poached egg, but most people are intimidated when it comes to poaching eggs at home. All you need is a saucepan and a slotted spoon! Contrary to hard-boiled eggs, fresh eggs tend to poach best as they area bit firmer and tend to hold their shape better.
Ingredients (serves 4)

Instructions
- In a medium saucepan, bring 2 to 3 inches of water to a boil, then reduce heat to a simmer.
- Cooking only one egg at a time, crack each egg into a small dish and gently slip into the simmering water.
- Allow egg to cook until the whites set, and the yolk begins to thicken, approximately 3 to 5 minutes. Do not stir.
- Using a slotted spoon, gently remove the egg from the pan and allow to drain on paper towels.
- Sprinkle with salt and pepper if desired and enjoy!
Steamed
If you’re looking for a new and different (but still easy) way to make your morning eggs, try these incredibly light and fluffy steamed eggs! Almost like an egg souffle, it’s like eating a cloud in every bite!
Ingredients (serves 1)
1 large Noah’s Pride egg
1 1/3 cup water, divided
salt, to taste
chives, for garnish
Instructions
- In a small saucepan, bring 1 cup of water to a boil.
- In a ramekin, add 1 beaten egg and salt to taste, slowly stir in remaining 1/3 cup water.
- Cover ramekin with foil and place into boiling water. Cover pan and allow to steam for about 12 minutes.
- Carefully remove ramekin from pan using tongs.
- Top with chives and enjoy!
Sunny Side
Whether you call them sunny side or fried eggs, this is another classic that you can’t go wrong with. The key to avoiding a tough or rubbery texture is to keep your heat low and steady. Again, fresh eggs work best here both for holding their shape and for having a compact and firm yolk.
Ingredients (serves 2)

2 tbsp butter

- In a nonstick skillet, melt butter over medium-high heat.
- Break eggs directly into your pan and reduce heat to low.
- Allow the eggs to cook slowly on low heat until the whites are set, and yolks begin to thicken.
- Remove, top with salt and pepper and enjoy!
Omelet
Truly the most versatile and customizable of our Easy Eggs 9-Ways, the omelet has endless possibilities. Fill them with your favorite meats, cheeses and veggies for a filling and savory start to your day!
Ingredients (serves 1)
2 large Noah’s Pride eggs
2 tbsp water
1 tbsp butter
salt and pepper, to taste
desired fillings (cheese, meats, veggies)
Instructions
- In a bowl, beat eggs, water, salt and pepper.
- In a nonstick skillet, melt butter over medium-high heat, tilting pan to coat.
- Pour in egg mixture and gently push cooked out edge toward the center. Continue cooking and tilting the pan gently as needed.
- Once the eggs are thickened and set, add desired fillings and fold the omelet in half.
- Slide or invert onto a plate and enjoy!
Egg Waffles
These days, people are making all kinds of things in a waffle maker. Everything from hash brown waffles to cinnamon roll waffles have taken over the internet. But have you tried making your eggs in a waffle maker? Just a customizable as an omelet but maybe a bit simpler to make, these egg waffles are about to transform your breakfast routine!

nonstick cooking spray
salt and pepper, to taste
desired fillings (cheese, meats, veggies)
Instructions
- In a bowl, beat eggs, salt, pepper and your desired fillings.
- Spray your hot waffle iron with nonstick cooking spray before pouring egg mixture into the iron.
- Allow to cook until eggs are set and slightly browned, approximately 2 minutes.
- Carefully remove and enjoy!
Cloud Eggs
Cloud eggs are exactly what they sound like: a light and fluffy version of a sunny side up egg that look like the shape of clouds! These fun eggs are so unique and offer a new texture to eggs.
Ingredients (serves 2)
2 large Noah’s Pride eggs
salt and pepper, to taste
Instructions
- Start by separating your egg whites from your yolks. Tip: use a water bottle to easily suck out the yolks!
- Using an electric mixer, whisk the egg whites until soft peaks begin to form. Fold in salt and pepper.
- Using a spoon, dallop the egg whites not a baking tray in an oval or cloud shape. Use your spoon to make a small indentation or well in the center of the egg whites. This is where the yolks will go later.
- Bake at 450°F for 8 to 10 minutes.
- Drop the yolks into the center of your “clouds” and allow to bake for an additional 3 minutes.
- Carefully remove from baking sheet, serve and enjoy!
Egg Noodles
This last recipe may be a but less breakfast themed, but it’s a great low-carb, keto-friendly pasta substitute than can be used to replace regular noodles in any dish! The best part? They have just one simple ingredient: eggs!
Ingredients (serves 1)
1 large Noah’s Pride egg
nonstick cooking spray
Instructions
- Coat a frying pan with nonstick cooking spray and heat over medium high.
- Add beaten egg to the pan in a thin layer, tilting the pan as needed to ensure the entire bottom is coated. Cover, and reduce heat to low.
- Allow eggs to cook until set, about 5 minutes.
- Invert eggs onto a cutting board and cut into ½ wide strips.
- Toss with sauce or add to soup and enjoy!
